MUTTON PULAO

INGREDIENTS
- 700g Mutton
with Nali
- 700g Rice
- 1 & 1/2
cup Onion (sliced)
- 1/4 cup
Tomatoes (chopped)
- 1/2 cup Yogurt
- 6 cloves
Garlic
- 1 tbsp Whole
spices
- Salt to taste
- 1 tbsp Red
chili powder
- 4 Green
chilies (chopped)
- 1 tbsp Cumin
powder
- 1 tbsp
Coriander powder
- 1 tbsp Ginger
garlic paste
- 1/2 cup Oil
- 1 tbsp Garam
masala powder
- 2 tbsp
Coriander (chopped)
- 2 tbsp Mint
(chopped)
RECIPE
- In a pot add six cups of water, mutton and boil a bit. Remove the scum.
- Then add salt, half cup onion, garlic cloves and cook until tender.
- Separate the meat and set stock aside for later use.
- In a separate pot heat oil, add one cup onion, whole spices, ginger garlic paste and cook until light brown.
- Add mutton, salt, cumin powder, coriander powder and red chili powder.
- Then add green chilies, tomatoes, yogurt, coriander leaves, mint leaves and cook for 5 minutes.
- Add mutton stock and cook for 2 more minutes.
- Add socked rice and cook on medium low flame.
- When water is soaked sprinkle garam masala powder, cover it and let it simmer on low flame for 12 to 15 minutes.
- Your biryani is ready to serve.
